Hi Jack, I’m going to enjoy these with a friend who can’t eat mushrooms. Should I go just with the cabbage or is there something I could use instead of mushrooms? -Thanks for the pie video, helps a lot!
If you wanted to leave out the mushrooms, but keep the cabbage, consider roasting potato or sweet potato pieces first to create an earthiness to replace the mushrooms. Another option - if you’re into it - is to use something like textured soy protein in place of the mushrooms.
