Cold summer soups require little effort to make and utilize fresh ingredients. My must-have summer soups include Yellow Pepper & Almond, Spicy Cucumber-Avocado, and Gazpacho.
Thanks Arielle...and I shall have the pleasure of also enjoying the "inevitable disgustingly hot Aussie summer" this Feb-March... I'm looking forward to my 2-month adventure - a bit less if the weather is really out of control hot!
Super creative takes!! I'll keep these recipes in mind when we get hit with the inevitable disgustingly hot Aussie summer in a few months.

Oops... sorry! That time of year is pretty good for heat in most places so you're in the clear!
I did eat and drink those three soups twice a day for three days and did not get tired of them…. Jack when are you making the next batch?
If the weather stays hot...soon!
These all look amazing, Jack! But I think the cucumber-avo soup is calling my name! I'll let you know how it goes. 🙂
Thanks Kerri - at the very least, I hope it brings you a smile (or three)...
Cucumber. Avo. Soy yogurt. How could it not?! :)
