Thanks for contributing, Paul…

I’m currently on a gazpacho roll - I’m making it every day, mostly because my wife can’t get enough, and I enjoy the Spanish vibe!

Jack, these all look so enticing. I appreciated your list of considerations, as I had not thought of most of them. I've developed recipes over the years for a few cold soups, but could definitely do with more practice. One of my favorites from a few years ago was a summer minestrone that you can eat as is (chunky) or blended to a creamy consistency and served with a dollop of pesto. And now you have me craving a cold soup. Love the idea of using almonds as a thickner/cream.

Thanks, Domenica...

A creamy summer minestrone...with a dollop of pesto...oh my, that is definitely something I need to try! Thanks for the idea...

By the way, my plans to visit Puglia in September are now firm...just in case you happen to be hanging around!
