Cold summer soups require little effort to make and utilize fresh ingredients. My must-have summer soups include Yellow Pepper & Almond, Spicy Cucumber-Avocado, and Gazpacho.
Jack, these all look so enticing. I appreciated your list of considerations, as I had not thought of most of them. I've developed recipes over the years for a few cold soups, but could definitely do with more practice. One of my favorites from a few years ago was a summer minestrone that you can eat as is (chunky) or blended to a creamy consistency and served with a dollop of pesto. And now you have me craving a cold soup. Love the idea of using almonds as a thickner/cream.
