This week’s recipes are all about classical soup recipes I’ve converted into soul-satisfying vegan versions. These simple-to-prepare soups are budget-friendly, delicious and happy to hang around and satisfy you for 3-5 days.

The creamy cauliflower soup is elegantly simple – it’s bringing a bit of fine dining to your kitchen. The onion soup is a classical French soup using humble ingredients and delivering big flavor. The roasted cabbage and farro soup warm the soul while completely satisfying your hunger.

Creamy Cauliflower Soup

Whenever I prepare this soup, I wonder why I don’t make it more often. It is simple and incredibly delicious.

I like to strain the soup after I blend to create a luxurious, pearly-white texture. This gives the soup an added layer of elegance – one you will notice when you slip this luscious soup into your mouth.

With the proper garnishes, this soup becomes a fine dining experience in your home. Serve it warm or hot…or even cold. The flavor of cauliflower is more pronounced as the soup cools.
