I enjoyed reading this piece, Jack. Flitting around the mediterranean... now that sounds like fun!

As for breakfast, well, I often feel quite hungry first thing, having fasted since 5pm the day before, so more often than not I'll cook a breakfast. I'll make something with beans and grains - and I'll spice it up with curry or chilli flavours. I make sure to get my fruits, nuts, and seeds in over lunch (perhaps in a salad), or as a dessert after dinner.

(ps…I also love a bit of spicy goodness in my morning food - it’s better than coffee…almost!)

I go through food phases for breakfast. For the longest time I ate avocado toast with seeds or herbs on top. Then came cottage cheese pancakes. Now I'm loving ricotta cheese toast with fresh fruit on top! Ricotta has all 9 essential amino acids, so I am a fan. Ricotta also makes a wonderful cheesecake-like dessert. Just add some almond or lemon extract and a drizzle of honey. Divine! Ricotta toast s also delicious to eat savory. Just top with veggies and herbs. Often I can use some leftover veggies from last night's dinner. This veggie pusher loves to start the day with some veggies.
