4 Salads That Make You Feel Warm and Cozy
I use grains, beans, or pasta to create hearty comfort salads for cooler weather.
One massive advantage of writers taking the plunge and putting their recipe work online and in spaces like this comfy home, Substack, is the ability to edit past work easily. And in the recipe world, this is an important feature. It’s not a stagnant environment – recipe ideas change, cooks and writers learn new things that impact past work, ingredients change, tastes change…ok, I think you get the idea.
As those changes occur, re-writing a recipe on this platform is far easier than in a published book…or remaking some cool video that took hours to shoot and many more hours to edit. So, to ensure I am delivering my most up-to-date work, I am modifying some of my past posts to reflect changes I’ve made to recipes…and to clean up some of my earlier writing.
I’m beginning with three of my favorite salads that are great to have on hand when the weather turns cool or even if your soul needs a bit of soothing comfort. All three recipes keep well in the refrigerator for 2-3 days – a bonus if you do not have time to cook each day.
The Freekeh Pilaf is a grain-based salad with 4 or 5 grilled vegetables. The Austrian-style Bean Salad uses large runner beans that fuse perfectly with tomatoes and freshly grated horseradish. The Spicy Sesame Noodle Salad – an old friend of mine – uses a thin spaghetti-like pasta that I toss with an incredibly delicious, sweet-sour-spicy sauce and a handful of toasted cashews.
And now there’s more…my Harvest Celebration Salad features grilled corn, massaged white cabbage, pickled white onions and cucumbers, and a dose of fresh chili peppers that certainly grab your attention.
